White Bean & Carrot Falafel

Makes 12

  • 1 Can white beans

  • 1/3 cup onions

  • 1/3 cup carrots

  • 1/2 cup cilantro

  • 2 cloves garlic

  • 1/2 tsp chili powder

  • Pinch of salt & pepper

  • Dressing: 1 tbsp plain greek yogurt, splash of coconut milk, 1/4 crushed garlic, 1 tbsp finely chopped cucumber.

Chop finely: garlic, cilantro, onions. Shred carrots with cheese grater. Throw all ingredients in blender and pulse blend for coarse texture (don’t make it mushy). Cover pan in coconut oil, Bake on 415ºf for 15min then flip and bake for another 15min on bottom shelf.
