Almond Flour Waffles

  • 4 eggs
  • 3 tbsp melted coconut oil or butter
  • 1 tbsp valilla extract
  • 1 cup almond milk
  • 1 cup almond flour
  • 5 crushed pecans 
  • sprinkle of chia and flaxseeds
  • 1/2 tsp salt

Topping 

  • 1 tbsp lactose free vanilla yogurt 
  • 1/4 blueberries 
  • drizzle of maple syrup
  • tangerines, or preferred fruit
  • chia seeds 

Separate eggs yolks and whites in two bowls. With a mixer, beat egg whites till stiff. Next beat yolks with melted coconut butter/oil, salt, vanilla till yellow, then slowly alternate almond milk and almond flour. When mixed evenly then carefully fold in whipped egg whites, toss but don't beat down. You have to keep the batter light and fluffy. Pour into Belgium waffle maker, sprinkle chia, flax, and pecans. Close lid and cook 30sec, then flip over and cook another 2min till golden brown.
