Creamy Coconut Curry Lentils

Servers 4-5

  • 1/2 zucchini 
  • 1 cup soybeans 
  • 1 can crushed tomatoes
  • 1 can coconut milk (full can w/water)
  • 1 1/2 cup broccoli
  • 1 1/2 cup cooked green lentils
  • 1/2 minced garlic
  • 2 tbsp curry powder

In big saucer pan add coconut oil and garlic with zucchini and broccoli. Once they are half cooked add tomatoes, coconut milk, soybeans, and curry powder. Cook on medium heat for 10 min. Lastly add lentils, cook for 5min and serve! You can eat with any grain, plain, or on top of a bed of greens.
