Fiber Collagen Buns

Makes 12

  • 2 eggs
  • 2 eggs whites
  • 2 cups almond flour
  • 2 scoops Vital Protein Collagen Peptides
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 4 tbsp avocado oil (can also use coconut or olive oil)
  • 1/2 cup of Barlean's flax, chia coconut blend (can also use just ground flaxseed)
  • splash of vanilla extract 
  • 1 tbsp chia seeds 
  • 3/4 cup water

Pre-heat oven to 350ºf and bake for 30min Add everything in bowl and mix! Slowly add water for desired consistency, If the mixture is too think add a little water. You can also add 2 tbsp honey or dried fruit for a hint of sweetness or just add to topping after baking. Let it sit for at least 15min to firm up before baking. Add what you'd like on top before baking till golden brown! I used flaxseeds and rolled oats.
