Mixed Quinoa Pizza Crust

  • 3/4 cup mixed quinoa
  • 1 1/4 cup water
  • 1/2 tsp. baking powder
  • 1 tbsp. melted coconut oil
  • 2 tsp. dry Basil leaf
  • 1 tsp. garlic powder

Topping

  • 1/2 cup plain Greek yogurt
  • 1/2 minced garlic
  • 1 tsp. chopped red chili
  • 3 tomatoes
  • 10 thinly sliced zucchini  
  • ~ 1 cup low-fat shredded cheese
  • 1 cup arugula
  • few sliced onions

Two ways:  you can either soak quinoa with 1 inch water on top overnight, or (fast way I did,) half way cook quinoa on stove so they are semi soft but not totally fluffy. Let quinoa cool and add to bender with baking powder. It should be a bit watery when blend, add water if too sticky. Grease cooking paper on a flat pan with coconut oil. When you spread dough it should be watery or too sticky, more of a spreadable paste that doesn't lose shape. Cook on bottom shelf at 425 degrees for 15min,then carefully flip over using another baking paper sheet and cook for another 10min on same heat. After, put topping (mix yogurt, chili and fresh garlic) on and bake till cheese melts, not more than5min. Add honey or syrup to crust to sweeten the taste, it will be a raw flavor, but delicious and very quick to make! Recipe for one personal size pizza.
